Haşıl (Flour-and-Butter Porridge)

The flour-thickened version of haşıl (distinct from the plain bulgur-and-yogurt version). Regional variants finish it with honey, milk, molasses (pekmez) or extra fat. Historically a hearty peasant/farm-labour dish of Eastern Anatolia.

Method
Place the coarse bulgur in a pot, add hot water to cover and a pinch of salt, and cook over low heat until the water is absorbed.
Add the flour while cooking and stir constantly until thickened and fully cooked through.
Cover the pot and let it rest for 5 minutes.
Spread it on a plate, make a well in the center, and pour the melted butter into the well.
Drizzle garlic yogurt over the top and serve hot.
