Mîrtoxe (Kurdish flour & egg skillet)

A classic Kurdish/Eastern Anatolian breakfast dish. The flour must be roasted enough to develop color and aroma; serve hot with honey or grape molasses (pekmez).

Method
Melt the butter in a non-stick pan.
Add the flour and roast it until it turns lightly brown.
Beat the eggs with a little salt in a separate bowl.
Add the beaten eggs to the roasted flour over low heat and stir quickly; the egg should not stay in pieces but blend fully with the flour.
Transfer to a plate and drizzle with walnuts and honey.
