A classic Kurdish/Eastern Anatolian breakfast dish. The flour must be roasted enough to develop color and aroma; serve hot with honey or grape molasses (pekmez).

Method

  1. Melt the butter in a non-stick pan.

  2. Add the flour and roast it until it turns lightly brown.

  3. Beat the eggs with a little salt in a separate bowl.

  4. Add the beaten eggs to the roasted flour over low heat and stir quickly; the egg should not stay in pieces but blend fully with the flour.

  5. Transfer to a plate and drizzle with walnuts and honey.
